Fats for Creaminess

Method

Oatmeal Base

  1. 1

    Combine liquids

In a small to medium saucepan, combine 1.5 cups water and 0.5 cup milk. Bring the mixture to a gentle simmer over medium heat — do not boil vigorously.

  2. 2

    Add oats and salt

Stir in 1 cup old-fashioned rolled oats and 1/4 tsp kosher salt. Reduce heat to medium-low so the liquid maintains a gentle simmer.

  3. 3

    Cook until tender

Cook, stirring occasionally, for 6–8 minutes until the oats have absorbed most of the liquid and reached a creamy consistency. If the mixture thickens too quickly, add 1–2 tablespoons water or milk to loosen.

Flavor & Finishing

  1. 4

    Enrich and sweeten

Remove the saucepan from heat. Stir in 1 tablespoon brown sugar, 1 teaspoon maple syrup, 1/4 tsp ground cinnamon, 1/4 tsp vanilla extract, and 1 teaspoon unsalted butter until melted and fully incorporated.

  2. 5

    Adjust consistency and seasoning

Taste and adjust sweetness or salt as desired. If you prefer thinner oatmeal, stir in up to 2 tablespoons additional milk. Let rest for 1 minute to thicken slightly.

Toppings & Serving

  1. 6

Spoon the oatmeal into a bowl. Top with sliced banana, 2 tablespoons toasted chopped walnuts, and 1/4 cup fresh berries. Drizzle with a little extra maple syrup if you like and add 1–2 tablespoons milk or cream for extra creaminess.

  2. 7

    Serve immediately while warm.

  3. 8

Leftover storage: Cool to room temperature, transfer to an airtight container, and refrigerate up to 4 days. Reheat with a splash of milk in the microwave or on the stove until warmed through, stirring to restore creaminess.
