Whisk eggs
Crack the 8 large eggs into a large mixing bowl. Add 1 cup whole milk, 1 tsp salt, 1 tsp freshly ground black pepper, and 2 tablespoons thinly sliced chives. Whisk vigorously until fully combined and slightly frothy. Set aside.

Preheat oven
Preheat your oven to 375°F (190°C).

Sauté aromatics
Heat a 10- to 12-inch oven-safe nonstick or cast-iron skillet over medium heat. Add 2 tablespoons extra-virgin olive oil and 1 tablespoon unsalted butter. Once butter is melted and foaming, add 1 cup diced yellow onion and 1/2 cup diced red bell pepper. Cook, stirring occasionally, until the onions are translucent and peppers are slightly softened, about 5–7 minutes.

Add garlic & greens
Add 2 teaspoons minced garlic and cook 30–45 seconds until fragrant. Add 2 cups roughly chopped baby spinach and cook until wilted, 1–2 minutes. If the skillet looks dry, add a splash (about 1 tablespoon) of water to help the spinach wilt. Spread the vegetables into an even layer across the skillet.

Combine proteins
Scatter 1 cup cooked breakfast sausage or diced ham evenly over the cooked vegetables in the skillet.

Add eggs & cheese
Give the egg mixture a quick re-whisk and pour it over the vegetables and meat in the skillet. Sprinkle 1 cup grated cheddar cheese evenly over the top and dot with 1/4 cup crumbled feta or goat cheese if using. Gently lift the edges of the cooked mixture with a spatula so uncooked egg flows underneath to create an even set.

Bake frittata
Transfer the skillet to the preheated oven. Bake until the center is just set and the top is lightly golden, about 12–18 minutes depending on oven and skillet size. Start checking at 12 minutes. The frittata should be slightly puffed and a knife inserted in the center should come out clean or with just a few moist crumbs.

Rest & garnish
Remove the skillet from the oven and let the frittata rest for 5 minutes to finish setting. Sprinkle 2 tablespoons chopped fresh parsley and 1/4 teaspoon red pepper flakes over the top. Drizzle 1 teaspoon olive oil if desired. Slice into 6 wedges and serve warm or at room temperature.
