Main Filling

Method

Main Filling

  1. 1

    Prep

Crack the 6 eggs into a medium mixing bowl. Add 1/2 cup whole milk, 3/4 tsp salt, and 1/2 tsp freshly ground black pepper. Whisk vigorously until yolks and whites are fully combined and the mixture is slightly frothy (about 30–45 seconds). Stir in the minced chives.

  2. 2

    Heat pan

Place a nonstick or well-seasoned 10-inch skillet over medium-low heat. Add 2 tablespoons unsalted butter. Melt the butter until it foams and the foam subsides but does not brown (about 1 minute). Swirl to coat the pan evenly.

  3. 3

    Cook eggs gently

Pour the egg mixture into the warm skillet. Let it sit undisturbed for 10–15 seconds until edges just begin to set. Using a silicone spatula, push the set edges toward the center while tilting the pan to let uncooked egg flow to the edges. Continue this gentle folding motion every 10–15 seconds until eggs are mostly set but still slightly custardy — about 3–5 minutes total over medium-low heat. For soft, creamy curds keep the heat low and avoid over-stirring.

  4. 4

    Add cheese

When eggs are about 80–90% set, sprinkle 1 cup shredded cheddar evenly over the top and fold gently to combine. Allow cheese to melt into the eggs for 30–45 seconds while removing the pan from direct heat once the eggs are nearly done; residual heat will finish them and keep them moist.

  5. 5

    Finish

Taste and adjust seasoning with a pinch more salt and pepper if needed. Transfer eggs to warmed plates or serve directly from the pan to retain heat.

Optional Add-ins

  1. 6

    Prepare bacon (if using)

If using bacon, cook 4 slices until crisp in a separate skillet or oven, then drain on paper towel and crumble. Add crumbled bacon to the eggs during the final fold with the cheese so it warms through.

  2. 7

    Sauté mushrooms (if using)

For mushrooms, heat 1 teaspoon oil or butter in a small skillet over medium-high heat. Add 1/2 cup chopped mushrooms and a pinch of salt. Sauté until browned and moisture has evaporated, about 5–6 minutes. Stir into eggs when adding cheese.

  3. 8

    Wilt spinach (if using)

To use spinach, add 1 cup chopped baby spinach to the egg mixture just after eggs begin to set. Toss quickly so spinach wilts and incorporates, then proceed to add cheese.

Serve

  1. 9

Plate the eggs with toasted bread or an English muffin. Add hot sauce or salsa to taste. Garnish with additional chopped chives if desired and serve immediately.
