Method
Main Ingredients
- 1
Prep eggs and milk
Crack the 6 large eggs into a medium mixing bowl. Add 1 cup milk and 1 teaspoon salt. Whisk vigorously until the mixture is uniform in color and slightly frothy, about 30–45 seconds. This creates a tender texture when cooked.
- 2
Heat pan and melt butter
Place a 10-inch nonstick skillet over medium-low heat. Add 2 tablespoons unsalted butter and let it melt, swirling to coat the pan evenly. The butter should foam but not brown.
- 3
Cook the eggs
Pour the egg mixture into the warm skillet. Let it sit undisturbed for 10–15 seconds until the edges begin to set. Using a silicone spatula, push the set edges gently toward the center, allowing uncooked egg to flow to the edges. Continue gently folding every 15–20 seconds until the eggs are mostly set but still slightly creamy, about 3–5 minutes total. Avoid high heat to prevent rubbery eggs.

Serve immediately while warm. Leftover eggs can be refrigerated in an airtight container for up to 2 days; reheat gently over low heat or in the microwave at 50% power for short intervals to avoid drying out.
