    Place a 10-inch nonstick skillet over medium-low heat. Add 2 tablespoons unsalted butter and let it melt, swirling to coat the pan evenly. The butter should foam but not brown.

    Cook the eggs

    Pour the egg mixture into the warm skillet. Let it sit undisturbed for 10–15 seconds until the edges begin to set. Using a silicone spatula, push the set edges gently toward the center, allowing uncooked egg to flow to the edges. Continue gently folding every 15–20 seconds until the eggs are mostly set but still slightly creamy, about 3–5 minutes total. Avoid high heat to prevent rubbery eggs.

    When eggs are nearly done but still slightly glossy, remove the pan from heat. Season with 1/2 teaspoon freshly ground black pepper. Add optional shredded cheddar now if using; fold gently so cheese melts into warm eggs. Taste and adjust salt if needed.
