    Beat eggs

    Crack 4 large eggs into a medium bowl. Add 2 tablespoons whole milk, 1 teaspoon salt and 1 teaspoon black pepper. Whisk vigorously until the mixture is uniform, slightly frothy and eggs are well combined (about 30–45 seconds). Set aside.

    Prepare vegetables

    Dice the onion and bell pepper, thinly slice mushrooms, roughly chop spinach and seed and dice the tomato so it won't release excess liquid into the omelette.

    Sauté aromatic vegetables

    Heat 1 tablespoon unsalted butter in a 10-inch nonstick skillet over medium heat until foaming. Add the diced onion and bell pepper and sauté for 3–4 minutes, stirring occasionally, until softened and translucent.

    Cook mushrooms and spinach

    Add the sliced mushrooms to the skillet. Cook 2–3 minutes until they release moisture and begin to brown. Add the chopped spinach and cook 30–45 seconds until wilted. If the pan looks dry, add up to 1/2 teaspoon olive oil or additional butter. Transfer the cooked vegetables to a small bowl and spread them flat so excess liquid cools and concentrates away from the eggs.

    Warm tomato

    Return the skillet to medium-low heat for 30 seconds and quickly warm the diced tomato in the residual heat (this removes a bit more moisture). Remove from heat.

    Heat pan & add eggs

    Wipe the skillet clean if needed and heat it over medium-low. Add 1/2 tablespoon unsalted butter and let it melt and foam but not brown. Pour the beaten egg mixture into the skillet and immediately reduce heat to low. Let eggs sit undisturbed for 10–15 seconds so edges begin to set.

    Stir & shape

    With a heatproof rubber spatula, gently stir the eggs in the center for 20–30 seconds, then tilt the pan and let the uncooked egg flow to the edges. Repeat once more until eggs are mostly set but still slightly glossy on top (about 45–60 seconds total).

    Add filling

    Evenly distribute the sautéed vegetable mixture across one half of the omelette. Sprinkle 1/2 cup grated sharp cheddar cheese over the vegetables, then scatter the diced tomato on top. Taste and add a small pinch of salt and pepper if desired.

    Fold & finish

    Using the spatula, gently fold the empty half of the omelette over the filled half to create a semicircle. Let cook on low for 30–60 seconds more until cheese melts and eggs are fully set but still tender. Avoid overcooking to keep the omelette moist.

Finishing & garnish

    Plate and garnish

    Slide the omelette onto a warm plate. Sprinkle 1 tablespoon thinly sliced chives over the top and add an extra crack of black pepper if desired. Serve immediately.
