    Crack and season

    Crack the 6 large eggs into a medium mixing bowl. Add 1 tablespoon whole milk, 1 teaspoon salt, and 1/2 teaspoon black pepper.

    Whisk

    Whisk vigorously until the whites and yolks are fully combined and the mixture is slightly frothy (about 30–45 seconds). This adds air for fluffier scrambles.

    Heat pan and melt butter

    Place a nonstick skillet over medium-low heat. Add 1 tablespoon unsalted butter and let it melt and just begin to foam but not brown (about 45–60 seconds).

    Cook eggs gently

    Pour the whisked eggs into the warm skillet. Let them sit undisturbed for about 10–15 seconds until the edges begin to set.

    Scramble slowly

    Using a silicone spatula, gently push the set edges toward the center and tilt the pan to let uncooked egg flow to the edges. Repeat in intervals, scraping and folding, keeping the heat low so curds form gradually. Cook until eggs are mostly set but still glossy and slightly runny (about 2–3 minutes total). Remove from heat early because the carryover heat will finish cooking.

    Prepare mix-ins

    While eggs are being whisked, heat a small skillet over medium heat and add a light spray or 1/2 teaspoon butter if desired. Sauté 1/4 cup finely chopped yellow onion and 1/4 cup diced red bell pepper until softened and translucent, about 3–4 minutes. Stir in 2 tablespoons chopped scallion greens for the last 30 seconds. Remove from heat and set aside.

    Combine with eggs

    When the eggs are about 80% set (still slightly runny), add the sautéed onion and pepper mixture into the pan and fold gently with the eggs so the mix-ins are evenly distributed. Sprinkle 1/2 cup shredded cheddar cheese over the eggs and fold once so it melts into the curds.

    Finish and season

    Remove the pan from heat. Taste and adjust seasoning if needed; add optional 1 teaspoon hot sauce and 1 tablespoon chopped fresh parsley, folding gently to combine.

    If serving with toast, brush 2 slices of bread or 1 English muffin with 1 teaspoon olive oil or butter and toast in a skillet or toaster until golden.

    Divide the scrambled eggs between 2 plates (serves 2). Top with extra chopped scallions or parsley if desired. Serve immediately with toasted bread or on the English muffin.
