Crack and season
Crack the 6 large eggs into a medium mixing bowl. Add 1 tablespoon whole milk, 1 teaspoon salt, and 1/2 teaspoon black pepper.

Whisk
Whisk vigorously until the whites and yolks are fully combined and the mixture is slightly frothy (about 30–45 seconds). This adds air for fluffier scrambles.

Heat pan and melt butter
Place a nonstick skillet over medium-low heat. Add 1 tablespoon unsalted butter and let it melt and just begin to foam but not brown (about 45–60 seconds).

Scramble slowly
Using a silicone spatula, gently push the set edges toward the center and tilt the pan to let uncooked egg flow to the edges. Repeat in intervals, scraping and folding, keeping the heat low so curds form gradually. Cook until eggs are mostly set but still glossy and slightly runny (about 2–3 minutes total). Remove from heat early because the carryover heat will finish cooking.

Prepare mix-ins
While eggs are being whisked, heat a small skillet over medium heat and add a light spray or 1/2 teaspoon butter if desired. Sauté 1/4 cup finely chopped yellow onion and 1/4 cup diced red bell pepper until softened and translucent, about 3–4 minutes. Stir in 2 tablespoons chopped scallion greens for the last 30 seconds. Remove from heat and set aside.

Finish and season
Remove the pan from heat. Taste and adjust seasoning if needed; add optional 1 teaspoon hot sauce and 1 tablespoon chopped fresh parsley, folding gently to combine.
