    Prep

    Gather ingredients. Preheat a skillet over medium heat. Warm tortillas in a low oven (200°F / 95°C) wrapped in foil, or on a dry skillet for 15–30 seconds each side just until pliable.

    Cook protein

    Add 1 tablespoon olive oil to the preheated skillet. Add diced onion and bell pepper and sauté 2–3 minutes until softened. Add ground turkey (or beef), breaking it into small pieces with a spatula. Cook 5–7 minutes until no longer pink.

    Season

    Stir in mild taco seasoning, salt, pepper, tomato paste and 2 tablespoons water. Mix well and simmer 2–3 minutes until mixture is slightly thickened and well combined. Taste and adjust seasoning (for children, keep flavors mild).

    Add veggies & cheese

    Stir in thawed corn and 1 cup of shredded cheddar just until melted and evenly distributed. Remove skillet from heat.

    Assemble mini quesadillas

    Place a warmed tortilla on a work surface. Spoon about 2–3 tablespoons of the turkey filling into the center, spread gently, and top with a little salsa (about 1 tablespoon) and a sprinkle of cheese (about 1–2 tablespoons). Fold tortilla in half and press gently. Repeat with remaining tortillas and filling.

    Crisp (optional)

    Heat a clean nonstick skillet over medium-low heat. Add the folded quesadillas in batches, cooking 1–2 minutes per side until golden brown and cheese is melted. Remove to a cutting board and let rest 1 minute before cutting.

Sides & Garnish

    Portion plain Greek yogurt into a small dipping bowl. If desired, thin with 1 teaspoon water to reach a spoonable consistency for kids.

    Fill a small bowl or plate with baby carrot sticks and apple slices. Place 2–3 tablespoons mashed avocado (or guacamole) in a small ramekin for dipping or spreading.

    Arrange 2 folded mini quesadillas per child on a plate with the yogurt, avocado, carrot sticks, and apple slices. Serve warm; let cool slightly before giving to young children.
