Quesadilla Filling

Beat eggs
Crack the 4 eggs into a medium bowl. Add 2 tablespoons milk, 1 teaspoon salt, and 1/2 teaspoon black pepper. Whisk until combined and slightly frothy.

Cook eggs
Heat 1 tablespoon unsalted butter in a nonstick skillet over medium-low heat until melted and foamy. Pour the beaten eggs into the skillet. Let sit for 10–15 seconds, then gently stir with a rubber spatula, pushing the eggs from the edges toward the center. Continue cooking slowly until curds form but eggs are still moist and slightly underdone, about 2–3 minutes total. Remove from heat — residual heat will finish them.

Prepare skillet
Wipe the skillet clean and return to medium heat. Add 1 tablespoon olive oil or butter and swirl to coat.

Assemble quesadilla
Place one flour tortilla in the skillet and warm for 20–30 seconds. Flip it so the warmed side is down. Spoon half of the egg-and-cheese mixture onto one half of the tortilla, spreading evenly but keeping a 1/2-inch border. Top with the second tortilla or fold the tortilla over to enclose the filling.

Cook quesadilla
Cook for 2–3 minutes, pressing gently with a spatula, until the bottom is golden brown. Carefully flip the quesadilla and cook another 2–3 minutes until the other side is golden and cheese is fully melted. If using two tortillas stacked rather than folded, cook each side similarly.

Finish and rest
Transfer the cooked quesadilla to a cutting board and let rest for 1 minute. This helps the cheese set slightly so it slices cleanly.

Slice and serve
Cut the quesadilla into 4 wedges using a sharp knife or pizza cutter. Serve with 1/4 cup sour cream, 1/4 cup salsa, and optional avocado or sliced tomatoes on the side.
