1. Prepare the Spaghetti Squash
Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the inside with olive oil, and season with salt and pepper. Place the squash cut-side down on a baking sheet and roast for about 30-40 minutes, until tender.
2. Make the Meatballs
In a large bowl, combine the ground beef, breadcrumbs, grated Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and black pepper. Mix until well combined. Form the mixture into meatballs, about 1 inch in diameter.
3. Cook the Meatballs
In a skillet, heat the remaining olive oil over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes. Once browned, add the marinara sauce to the skillet, cover, and let simmer for another 10-15 minutes until the meatballs are cooked through.
4. Serve
Once the spaghetti squash is roasted and the meatballs are cooked, use a fork to scrape the inside of the squash to create 'noodles.' Serve the spaghetti squash topped with the meatballs and marinara sauce. Garnish with fresh basil.
