    Prepare the Spaghetti Squash

    Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise, scoop out the seeds, and drizzle with olive oil. Season with salt and black pepper. Place cut-side down on a baking sheet and roast for about 30-40 minutes until tender.

    Prepare the Eggplant

    While the squash is roasting, dice the eggplant and sprinkle with salt. Let it sit for about 10-15 minutes to draw out moisture. Rinse and pat dry with paper towels.

    Cook the Eggplant

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced eggplant and sauté until soft and lightly browned, about 8-10 minutes. Add minced garlic and cook for an additional 1-2 minutes.

    Make the 'Meatballs' Mixture

    In a large bowl, combine the roasted spaghetti squash (scooped out with a fork), cooked eggplant, breadcrumbs, Parmesan cheese, chopped parsley, and the egg. Mix well until combined. Season with salt and pepper to taste.

    Form the mixture into meatballs, about 1.5 inches in diameter.
