    Prepare the Fritter Mixture

    In a mixing bowl, combine goat cheese, cream cheese, flour, eggs, salt, and black pepper. Mix until well combined and smooth.

    Form the Fritters

    Using your hands, form the mixture into small balls or patties, about 1 inch in diameter. Roll each fritter in breadcrumbs to coat evenly.

    Fry the Fritters

    In a large skillet, heat the olive oil over medium heat. Fry the fritters in batches until golden brown, about 3-4 minutes on each side. Remove and drain on paper towels.

    Roast the Peaches

    Preheat the oven to 400°F (200°C). Place the halved peaches on a baking sheet, cut side up. Drizzle with olive oil and roast for 15-20 minutes until tender.

    Prepare the Basil Vinaigrette

    In a small bowl, whisk together balsamic vinegar, honey, and chopped basil. Drizzle in olive oil while whisking until the mixture is emulsified.
