Prepare the Chicken
Cut the boneless chicken breast into bite-sized pieces and place them in a bowl. Add 2 tablespoons of soy sauce and the cornstarch to the chicken, mixing well to evenly coat. Let marinate for 15 minutes.

Prepare the Vegetables
While the chicken is marinating, wash and chop the broccoli, carrots, and bell pepper into bite-sized pieces. Set aside.

Mix Sauce
In a small bowl, combine the remaining soy sauce, chicken broth, sesame oil, minced garlic, and ginger. Mix well and set aside.

Stir-Fry the Chicken
In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the marinated chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

Cook the Vegetables
In the same skillet, add another tablespoon of oil if needed. Add the broccoli, carrots, and bell peppers, stir-frying for about 3-4 minutes until they are tender-crisp.

Return the cooked chicken to the skillet with the vegetables. Pour the sauce mixture over the chicken and vegetables. Stir well to combine and cook for an additional 2-3 minutes until the sauce is thickened and bubbly.

Serve the stir-fry hot over cooked rice, garnished with chopped green onions.
