    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Create a well in the center and crack the eggs into this well. Add olive oil.

    Using a fork, beat the eggs gently while gradually incorporating the flour from the edges of the well until a shaggy dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

Lobster Filling

    Prepare the Filling

    In a mixing bowl, combine the cooked lobster meat, ricotta cheese, grated Parmesan, lemon zest, chopped parsley, salt, and black pepper. Mix well until fully combined.

    Chill the Filling

    Cover the bowl and refrigerate the filling for at least 15 minutes to allow the flavors to meld.

Assembling Ravioli

    Roll Out Dough

    Divide the dough into four pieces. Roll out each piece using a pasta machine or a rolling pin until thin (about 1/16 inch thick).

    Form Ravioli

    Lay one sheet of pasta on a floured surface. Place teaspoons of the lobster filling about 1 inch apart on the pasta. Brush around the filling with water to help seal.

    Place another sheet of pasta over the filling. Press down around the filling to seal, ensuring there are no air pockets. Cut into squares or circles using a ravioli cutter or knife.

Cooking Ravioli

    Bring a large pot of salted water to a boil.

    Add the ravioli to the boiling water and cook for 3-4 minutes until they float to the surface. Remove with a slotted spoon and set aside.

Sauce Preparation

    In a large skillet, melt the butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.

    Pour in the heavy cream and stir. Season with salt and black pepper. Cook for an additional 2-3 minutes until slightly thickened.
