Prepare the Filling

    Mix the Filling Ingredients

    In a large bowl, combine ground pork, shrimp, green onions, minced garlic, minced ginger, soy sauce, sesame oil, salt, and black pepper. Mix well until all ingredients are thoroughly incorporated.

    Fill the Wontons

    Take a wonton wrapper and place a teaspoon of the filling in the center. Moisten the edges of the wrapper with water, fold it in half diagonally to form a triangle, and press to seal. Then, bring the two corners of the triangle together and press to seal, creating a wonton shape. Repeat with remaining filling and wrappers.

Prepare the Szechuan Sauce

    Toast Szechuan Peppercorns

    In a small pan, lightly toast the Szechuan peppercorns over medium heat until fragrant, about 2 minutes. Remove from heat and let cool.

    In a small saucepan, combine toasted Szechuan peppercorns, chili oil, soy sauce, rice vinegar, sugar, minced garlic, cornstarch, and water. Cook over medium heat until the sauce thickens, stirring continuously. Remove from heat and set aside.

Cook the Wontons

    Boil the Wontons

    Bring a large pot of water to a boil. Carefully drop the wontons into the boiling water in batches, making sure not to overcrowd the pot. Cook for about 4-5 minutes or until the wontons float to the surface and are cooked through. Remove with a slotted spoon and drain.

Serve

    Place the cooked wontons on a serving plate, drizzle with the Szechuan sauce, and sprinkle chopped cilantro and peanuts on top. Serve immediately.
