Marinating the Pork

Prepare the Marinade
In a bowl, combine soy sauce, cornstarch, minced garlic, and minced ginger. Mix well.

Marinate the Pork
Cut the pork tenderloin into bite-sized pieces and add it to the marinade. Toss to coat evenly. Let it marinate for at least 30 minutes.
Making the Sweet and Sour Sauce

Combine Sauce Ingredients
In a saucepan, combine brown sugar, rice vinegar, ketchup, soy sauce, and pineapple juice. Stir well.

In a small bowl, mix cornstarch and water to create a slurry. Add this to the saucepan and cook over medium heat until the sauce thickens, about 5 minutes.

In a large skillet or wok, heat vegetable oil over medium-high heat.

Add the marinated pork to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
