Prepare the Noodles
Soak the Mai Fun noodles in hot water for about 10 minutes or until they are soft. Drain and set aside.

Prepare the Proteins
Cut the chicken breast into small bite-sized pieces, slice the pork tenderloin thinly, and ensure the shrimp is peeled and deveined.

Chop the Vegetables
Julienne the carrot, slice the bell pepper, and chop the green onions. Set aside with the bean sprouts.

Stir-fry the Proteins
In a large wok or skillet, heat a tablespoon of sesame oil over medium-high heat. Add the chicken and stir-fry for 3-4 minutes until browned. Add the pork and shrimp, cooking for an additional 3 minutes until fully cooked. Remove from the pan and set aside.

Stir-fry the Vegetables
In the same wok, add another tablespoon of sesame oil if needed. Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant. Then add the carrots, bell pepper, and bean sprouts, stir-frying for about 2-3 minutes until they are slightly tender.

Combine Ingredients
Add the cooked proteins back into the wok with the vegetables. Stir in the soaked Mai Fun noodles, soy sauce, oyster sauce, salt, and black pepper. Toss everything together for another 3-4 minutes until well combined and heated through.
Serving

Garnish and Serve
Remove from heat, sprinkle with chopped cilantro, and serve hot with lime wedges on the side for squeezing over the dish.
