Cut the chicken thighs into bite-sized pieces and season with salt and pepper. Set aside.

Cook Chicken
In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.

In the same skillet, add another tablespoon of oil if needed. Add the sliced bell pepper, onion, minced garlic, and ginger. Stir-fry for about 3-4 minutes until vegetables are tender but still crisp.

In a small bowl, combine Sa Cha sauce, soy sauce, sugar, sesame oil, water, and cornstarch. Mix until smooth.

Return the cooked chicken to the skillet with the vegetables. Pour the sauce mixture over the chicken and vegetables. Stir well to combine and cook for an additional 2-3 minutes until the sauce thickens.
