    Cut the chicken thighs into bite-sized pieces and season with salt and pepper. Set aside.

    Slice the bell pepper and onion, and mince the garlic and ginger. Set aside.

Cooking

    In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.
