    Marinate the Pork

    In a bowl, combine olive oil, minced garlic, chopped fresh rosemary, salt, and black pepper. Rub this marinade all over the pork shoulder, ensuring it's well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

    Preheat your oven to 325°F (165°C) while the pork is marinating.

    Roast the Pork

    Place the marinated pork shoulder in a roasting pan. Roast in the preheated oven for approximately 2 to 2.5 hours, or until the internal temperature reaches 145°F (63°C). Baste occasionally with the juices.

    Rest the Pork

    Once cooked, remove the pork from the oven and let it rest for at least 15 minutes before slicing.

Mushroom Sauce Preparation

    Sauté the Onions and Garlic

    In a skillet, melt the butter over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Add minced garlic and sauté for an additional minute.

    Cook the Mushrooms

    Add the sliced mushrooms to the skillet. Cook for about 8-10 minutes, or until they are browned and have released their moisture.

    Prepare the Sauce

    Pour in the chicken broth, scraping the bottom of the pan to deglaze. Let it simmer for 5 minutes, then add the heavy cream. Stir well, and season with salt and black pepper. Allow to simmer until slightly thickened, about 5 more minutes.

    Finish the Sauce

    Stir in the chopped fresh parsley and remove from heat. Adjust seasoning if necessary.
