Lo Mein
Method
Pork Preparation
- 1
- 2
Add Pork
Place the pork tenderloin in the marinade, ensuring it is well coated. Cover and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
- 3
Preheat the Oven
Preheat your oven to 400°F (200°C).
- 4
Roast the Pork
Remove the pork from the marinade and place it on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until the internal temperature reaches 145°F (63°C).
- 5
Rest the Pork
Once cooked, remove the pork from the oven and let it rest for 10 minutes before slicing.
Lo Mein Preparation
- 6
Cook the Noodles
In a large pot of boiling water, cook the lo mein noodles according to package instructions until al dente. Drain and set aside.
- 7
Stir-fry the Vegetables
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the julienned carrot, sliced bell pepper, and broccoli florets. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- 8
Combine Ingredients
Add the cooked lo mein noodles to the skillet along with the soy sauce and oyster sauce. Toss everything together to coat the noodles and vegetables evenly.
- 9
Add the Pork
Slice the rested pork tenderloin and add it to the skillet with the lo mein. Toss to combine all ingredients and heat through for an additional 2-3 minutes.
- 10
Garnish and Serve
Sprinkle with chopped green onions and black pepper to taste before serving.
