Marinate the Pork
In a bowl, combine the soy sauce, sesame oil, minced garlic, grated ginger, and brown sugar. Mix well until sugar is dissolved. Add the pork loin, ensuring it’s well-coated. Cover and refrigerate for at least 30 minutes, preferably overnight.

Preheat your oven to 200°C (400°F). Place the marinated pork loin on a roasting pan. Roast in the oven for 25-30 minutes, or until the internal temperature reaches 70°C (160°F). Let it rest for 10 minutes before slicing.

Cook the Noodles
Boil a pot of water and cook the chow mein noodles according to package instructions. Drain and rinse under cold water to stop cooking. Set aside.

Combine Noodles and Sauce
Add the cooked noodles to the vegetable mixture. Pour in 2 tablespoons of soy sauce and 1 tablespoon of oyster sauce. Toss everything together for 2-3 minutes until well combined and heated through.

Slice the roasted pork loin thinly and add it to the chow mein mixture. Toss gently to incorporate the pork. Garnish with chopped green onions and toasted sesame seeds before serving.
