Trim any excess fat from the pork tenderloin and cut it into small bite-sized pieces.

Dice the carrots, mince the garlic, and grate the ginger. Slice the green onions, separating the white parts from the green parts.

In a small bowl, beat the eggs. Heat a tablespoon of sesame oil in a large skillet or wok over medium heat. Add the beaten eggs and scramble until fully cooked. Remove from the skillet and set aside.
