Prepare the Broth
In a large pot, combine the water and chicken bones. Bring to a boil over high heat and then reduce to a simmer.

Add Aromatics
Add the star anise, cinnamon stick, sliced ginger, and crushed garlic cloves to the pot. Stir well.

Simmer the Broth
Let the broth simmer for at least 2 hours, skimming off any foam or impurities that rise to the top.

Season the Broth
After 2 hours, add fish sauce and salt to the pot. Adjust seasoning to taste and simmer for another 30 minutes.

Strain the Broth
Once done, strain the broth through a fine mesh sieve to remove all solids. Keep the liquid warm.
Noodle and Topping Preparation

Cook the Noodles
In a separate pot, bring water to a boil. Add rice noodles and cook according to package instructions until al dente. Drain and set aside.

Cook the Chicken
While the noodles are cooking, poach the chicken breast in the simmering broth for about 15-20 minutes until cooked through. Remove and slice thinly.

Prepare the Garnishes
Chop green onions and cilantro, and rinse the bean sprouts. Cut the limes into wedges.

Assemble the Bowl
In a bowl, place a portion of the cooked rice noodles, top with sliced chicken, green onions, cilantro, and bean sprouts. Squeeze lime juice over the top and drizzle with sriracha sauce.

Ladle the hot broth over the bowl and serve immediately with additional lime and sriracha on the side.
