Broth Preparation

    Prepare the Broth

    In a large pot, combine the water and chicken bones. Bring to a boil over high heat and then reduce to a simmer.

    Add Aromatics

    Add the star anise, cinnamon stick, sliced ginger, and crushed garlic cloves to the pot. Stir well.

    Simmer the Broth

    Let the broth simmer for at least 2 hours, skimming off any foam or impurities that rise to the top.

    Season the Broth

    After 2 hours, add fish sauce and salt to the pot. Adjust seasoning to taste and simmer for another 30 minutes.

    Strain the Broth

    Once done, strain the broth through a fine mesh sieve to remove all solids. Keep the liquid warm.

Noodle and Topping Preparation

    In a separate pot, bring water to a boil. Add rice noodles and cook according to package instructions until al dente. Drain and set aside.
