Prepare the Broth
In a saucepan, heat the vegetable broth over low heat. Keep it warm throughout the cooking process.

Sauté the Mushrooms
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the wild mushrooms and sauté until they are soft and browned, about 5-7 minutes. Remove from the skillet and set aside.

Add the Wine
Pour in the white wine and let it simmer until most of the liquid has evaporated, stirring frequently.

Add the Broth Gradually
Begin adding the warm vegetable broth, one ladle at a time, stirring continuously. Allow the rice to absorb the broth before adding more. Continue this process until the rice is creamy and al dente, about 18-20 minutes.

Stir in Mushrooms and Cheese
Once the rice is cooked, fold in the sautéed mushrooms, the remaining butter, and the grated Parmesan cheese. Season with salt and black pepper to taste.

Garnish and Serve
Remove from heat and stir in the chopped parsley. Serve hot, garnished with additional Parmesan if desired.
