Rehydrate the Mushrooms
Soak the dried wood ear mushrooms in warm water for about 30 minutes until they are soft. Drain and slice into strips.

Prepare the Chicken
Cut the chicken breast into thin strips and season with salt and black pepper.

Prepare the Vegetables
Julienne the carrot, shred the cabbage, and chop the green onions. Mince the garlic and ginger.

Cook the Chicken
In a large skillet or wok, heat sesame oil over medium-high heat. Add the chicken strips and cook until they are no longer pink, about 5-7 minutes. Remove the chicken from the skillet and set aside.

Stir-fry the Vegetables
In the same skillet, add a bit more oil if necessary. Add garlic, ginger, and the prepared vegetables (carrot, cabbage, mushrooms, and green onions). Stir-fry for about 5 minutes until vegetables are tender but still crisp.

Return the cooked chicken to the skillet with the vegetables. Add soy sauce and hoisin sauce. Stir well to combine and cook for an additional 2-3 minutes.
