    Marinate the Beef

    Thinly slice the beef flank steak against the grain into bite-sized pieces. In a bowl, combine soy sauce, rice wine or sherry, cornstarch, and ground black pepper. Add the beef slices and toss to coat. Let it marinate for at least 30 minutes.

    Prepare the Vegetables

    While the beef is marinating, prepare the vegetables. Clean and slice the shiitake mushrooms. Julienne the carrots. Chop the green onions, separating the white and green parts. Shred the cabbage and set all the prepared vegetables aside.

    Cook the Eggs

    In a large skillet or wok, heat a tablespoon of oil over medium heat. Beat the eggs in a bowl and pour them into the skillet. Cook until just set, about 2 minutes. Remove from the skillet, chop, and set aside.

    Stir-Fry the Beef

    In the same skillet, add another tablespoon of oil and heat over high heat. Add the marinated beef and stir-fry for about 3-4 minutes or until browned and cooked through. Remove the beef from the skillet and set aside.

    Cook the Vegetables

    Add the remaining tablespoon of oil to the skillet. Stir in the mushrooms, carrots, and the white parts of the green onions. Stir-fry for 2-3 minutes until the vegetables are tender. Then, add the shredded cabbage and stir-fry for another 2 minutes.

    Combine Everything

    Return the cooked beef and eggs to the skillet with the vegetables. Add the hoisin sauce and sesame oil. Stir well to combine all ingredients and heat through for about 1-2 minutes.

    Serve

    Warm the Chinese pancakes or tortillas in a dry skillet. To serve, place a generous amount of the Moo Shu Beef mixture onto a pancake, drizzle with additional hoisin sauce if desired, and roll it up. Enjoy!
