If using whole lobsters, cook them in boiling water for about 10-12 minutes until bright red. Remove the meat and chop into bite-sized pieces. Set aside.

Add Tomato Paste and Flour
Mix in the tomato paste and flour, stirring constantly for about 2 minutes to cook the flour and enhance the flavors.

Pour in Stock
Gradually add the fish or lobster stock to the pot, stirring constantly to ensure no lumps form. Bring the mixture to a simmer.

Incorporate Cream and Season
Once simmering, lower the heat and stir in the heavy cream, sherry wine, salt, black pepper, and paprika. Continue to simmer for about 10 minutes, allowing the flavors to meld.

Gently fold in the cooked lobster meat, allowing it to heat through for about 5 minutes.
