Cut into Fries
Cut each potato into thin strips, about 1/4 inch thick. Try to keep the size consistent for even cooking.

Soak in Water
Place the cut fries in a large bowl of cold water. Let them soak for at least 30 minutes to remove excess starch.

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat. Use a thermometer to check that the oil reaches 350°F (175°C).

Dry the Fries
After soaking, drain the fries and pat them dry with paper towels to remove excess moisture. This helps them become crispy.

Carefully add a handful of fries to the hot oil, being careful not to overcrowd the pot. Fry in batches for about 4-6 minutes or until golden brown.
