    Prepare the Grains

    Rinse quinoa and rice separately under cold water. Cook quinoa in a pot with 2 cups of water until boiling, then reduce heat and simmer for 15 minutes. Cook rice according to package instructions.

    Chop bell pepper and zucchini into bite-sized pieces. Slice mushrooms and rinse spinach under cold water.

    Prepare the Proteins

    Dice chicken breast and slice sausage. Peel and devein shrimp, and cube tofu.

Cooking

    Cook the Chicken

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add diced chicken breast, season with salt and pepper, and cook until browned and cooked through, about 7-10 minutes. Remove from skillet and set aside.

    Cook the Sausage

    In the same skillet, add another tablespoon of olive oil and sliced sausage. Cook for about 5 minutes until browned. Remove from skillet and set aside.

    Cook the Shrimp

    In the same skillet, add the last tablespoon of olive oil and shrimp. Cook for 3-4 minutes until shrimp are pink and opaque. Remove from skillet and set aside.

    In the same skillet, add minced garlic, bell pepper, zucchini, and mushrooms. Sauté for 5-7 minutes until vegetables are tender. Add spinach and cook until wilted.

    Combine Ingredients

    Add the cooked quinoa and rice to the skillet with vegetables. Stir in the cooked chicken, sausage, and shrimp. Sprinkle with Italian herbs, and mix well. Heat through for about 2-3 minutes.
