Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

  2. 2

    Mix Dry Ingredients

In a mixing bowl, whisk together the all-purpose flour, granulated sugar, salt, and cornstarch until well combined.

  3. 3

    Whisk Egg Whites

In a separate bowl, using an electric mixer or whisk, beat the egg whites until frothy but not stiff.

  4. 4

    Combine Ingredients

Gently fold the dry ingredients into the egg whites, then add the vanilla extract, almond extract, and water. Mix until you have a smooth batter.

Baking

  1. 5

    Scoop Batter

Using a tablespoon, drop small circles of batter (about 3 inches in diameter) onto the prepared baking sheet, leaving space between each cookie as they will spread.

  2. 6

    Bake

Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden.

  3. 7

    Shape Cookies

Remove the cookies from the oven and allow them to cool for about 1 minute. While still warm and pliable, quickly place a fortune slip in the center of each cookie, fold the cookie in half, and then gently bend the ends to create the fortune cookie shape.

  4. 8

    Cool

Place the shaped cookies in a muffin tin or on a wire rack to hold their shape while cooling completely.
