Preparing the Beef Tenderloin

Preheat the Oven
Preheat your oven to 400°F (200°C).

Sear the Beef
Heat a large skillet over medium-high heat. Once hot, sear the beef tenderloin for about 2-3 minutes on each side until browned.

Roast the Beef
Transfer the seared beef to a baking dish, place rosemary sprigs on top, and roast in the preheated oven for about 25-30 minutes for medium-rare or until desired doneness.

Rest the Beef
Remove the beef from the oven and let it rest for 10 minutes before slicing.

Cook the Garlic
While the potatoes are cooking, peel and mince the garlic cloves. In a small saucepan, melt 2 tablespoons of butter over low heat and sauté the garlic until fragrant, about 2 minutes.

Add Milk and Season
Pour in the milk and season with salt and black pepper. Stir until well combined and creamy.
