Chicken Brine
Method
Brining and Cooking
- 1
Brine the Chicken
In a large bowl, combine water, salt, brown sugar, black pepper, garlic powder, onion powder, and paprika. Stir until the salt and sugar are fully dissolved. Add the chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours or overnight.
- 2
Prepare the Waffle Batter
In a large bowl, mix 2 cups all-purpose flour, 2 tsp baking powder, 1 tsp baking soda, 1 tsp sugar, and a pinch of salt. In another bowl, whisk together 2 large eggs, 1 3/4 cups buttermilk, and 1/2 cup melted butter. Combine both mixtures and stir until just combined.
- 3
Fry the Chicken
Remove the chicken from the brine and pat dry with paper towels. Dredge in seasoned flour (1 1/2 cups flour mixed with 1 tsp salt, 1/2 tsp black pepper, and 1 tsp paprika). Heat vegetable oil in a deep skillet over medium-high heat. Fry the chicken pieces until golden brown and cooked through, about 15-18 minutes per side. Drain on paper towels.
- 4
Cook the Waffles
Preheat the waffle iron. Pour the waffle batter into the preheated waffle iron and cook according to the manufacturer's instructions until golden brown.
- 5
Serve
Serve the crispy fried chicken on top of the waffles. Drizzle with maple syrup and enjoy!
