Marinate the Chicken or Fish

In a large bowl, combine the buttermilk, cayenne pepper, paprika, garlic powder, onion powder, salt, and black pepper. Whisk together until well mixed. Add the chicken thighs or fish fillets and ensure they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.

Prepare the Coating

In a separate bowl, mix the all-purpose flour and cornmeal together. Set aside.

Heat the Oil

In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat and Fry

Remove the chicken or fish from the buttermilk marinade, allowing excess to drip off. Dredge each piece in the flour and cornmeal mixture, pressing lightly to adhere. Carefully place in the hot oil and fry for about 5-7 minutes on each side, or until golden brown and cooked through. Adjust cooking time for fish accordingly.

Make the Spicy Sauce

In a small bowl, combine the hot sauce with a little bit of the leftover frying oil (about 2 tablespoons) to taste. Mix well.

Finish and Serve

Once the chicken or fish is cooked, remove from the oil and let it drain on paper towels. Brush generously with the spicy sauce. Serve on buns with pickles on the side.
