Fried Chicken

1. Marinate chicken breasts in buttermilk for at least 1 hour or overnight in the refrigerator. 2. In a bowl, mix flour, cajun seasoning, salt, and black pepper. 3. Heat vegetable oil in a skillet over medium heat. Remove chicken from buttermilk, dredge in flour mixture, and fry until golden brown and cooked through, about 5-7 minutes per side. Drain on paper towels.

White Gravy

1. In the same skillet, melt butter over medium heat. 2. Whisk in flour and cook for 1-2 minutes until golden brown. 3. Slowly add milk while whisking to avoid lumps. Cook until thickened, about 3-5 minutes. Season with salt and pepper.

Creamy Mashed Potatoes

1. Boil potatoes in salted water until tender, about 15-20 minutes. Drain and return to pot. 2. Add butter, milk, salt, and pepper. Mash until smooth and creamy.

Collard Greens

1. In a large pot, sauté chopped onion and minced garlic until softened. 2. Add collard greens and vegetable broth. Simmer for 30 minutes. Season with red pepper flakes, salt, and pepper.
