Preparing the Fish

Step 1: Marinate the Fish

In a bowl, soak the fish fillets in buttermilk for at least 30 minutes to tenderize and flavor the fish.

Step 2: Prepare the Coating

In a shallow dish, combine cornmeal, flour, cayenne pepper, paprika, salt, and black pepper. Mix well.

Step 3: Coat the Fish

Remove fish from buttermilk, allowing excess to drip off. Dredge each piece in the cornmeal mixture, ensuring an even coating.

Step 4: Fry the Fish

Heat the oil in a deep skillet or fryer to 350°F (175°C). Fry fish pieces in batches for 4-5 minutes or until golden brown and cooked through. Drain on paper towels.

Step 1: Cut the Potatoes

Wash and cut the russet potatoes into thin strips to create fries.

Step 2: Prepare Beer Batter

In a bowl, combine flour, baking powder, and salt. Slowly whisk in the beer until smooth.

Step 3: Fry the Fries

Heat the oil in a separate pot or fryer to 350°F (175°C). Dip the potato strips in the beer batter and carefully drop them into the hot oil. Fry for about 5-6 minutes or until golden and crispy. Drain on paper towels.

Serve the fried fish alongside the crispy beer-battered fries. Optionally, garnish with lemon wedges and tartar sauce.
