Cook the Pork
Pour in the water, bring to a boil, then reduce heat to low. Cover and simmer for about 2 hours, or until the pork is tender and falling off the bone. Remove pork, shred the meat, and discard the bones.
Prepare the Enchiladas
Preheat the oven to 350°F (175°C). In a baking dish, spread a thin layer of red or green chile sauce. Dip each corn tortilla in the sauce, then fill with shredded pork and a sprinkle of cheese. Roll up and place seam-side down in the dish.
Assemble and Bake
Once all tortillas are in the dish, pour remaining chile sauce over the top, then sprinkle with the remaining cheese. Bake for 20-25 minutes until the cheese is melted and bubbly.
Serve
Remove from the oven, top with shredded lettuce and pico de gallo. Serve hot with cooked beans on the side.
