Mussels & Broth

    Clean mussels

    Rinse the mussels under cold running water. Discard any mussels with cracked shells or that do not close when tapped. Use a small knife to remove the beard from each mussel and scrub stubborn debris with a brush.

    Sweat aromatics

    In a large deep skillet or wide pot with a tight-fitting lid, heat the olive oil and 2 tablespoons butter over medium heat until shimmering and butter is foaming. Add the diced onion and cook, stirring occasionally, until softened and translucent, about 4–5 minutes. Add the minced garlic and red pepper flakes, and cook, stirring, until fragrant, about 30 seconds—do not brown the garlic.

    Deglaze & build broth

    Increase heat to medium-high, pour in the white wine, and scrape up any browned bits from the bottom of the pan. Let the wine reduce by about half, 1–2 minutes. Add the stock, 2 tablespoons lemon juice, chopped thyme, half of the chopped parsley, salt, and pepper. Bring the liquid to a simmer.

    Cook mussels

    Add the cleaned mussels to the simmering broth, cover with the lid, and steam until the mussels open, about 5–7 minutes. Shake the pan once or twice during cooking to redistribute mussels. Discard any mussels that remain closed after 7 minutes.

    Remove & reserve

    Using a slotted spoon, transfer the opened mussels to a warmed serving bowl, reserving the broth in the pot for finishing.

Finishing Sauce (emulsified lemon-herb butter)

    Reduce & finish broth

    Return the pot with the reserved broth to medium heat and let it reduce slightly for 1–2 minutes so flavors concentrate.

    Emulsify butter

    Lower the heat to low. Whisk in the cold butter pieces, one at a time, allowing each piece to melt and emulsify into the broth before adding the next. Stir in the additional 1 tablespoon lemon juice, lemon zest, remaining chopped parsley, and adjust seasoning with 1/8 teaspoon salt and 1/8 teaspoon black pepper. Taste and adjust acidity or salt as needed.

    Combine with mussels

    Pour the finished lemon-herb butter sauce over the reserved mussels and gently toss to coat. Spoon some of the sauce into the shells for flavor and presentation.

To Serve

    Transfer mussels and sauce to a shallow serving bowl. Serve immediately with warmed pita halves and lemon wedges on the side for squeezing. Provide a small bowl for discarded shells and crusty bread or pita to soak up the sauce.
