    Shake

    Fill a cocktail shaker with crushed ice. Add 2 oz light rum, 0.75 oz fresh lime juice, 0.5 oz orange curaçao, 0.5 oz orgeat syrup, 1 oz pineapple juice and 0.25 oz simple syrup to the shaker. Secure the lid and shake vigorously for about 10–15 seconds until well chilled.

    Strain

    Fill a double old-fashioned glass (or tiki mug) with fresh crushed ice. Strain the shaken mixture over the ice, letting it settle into the glass.

    Float dark rum

    Using the back of a bar spoon, slowly pour 0.5 oz dark rum over the top of the drink so it floats on the surface, creating a layered look.

Garnish & Finish

    Garnish the cocktail with a pineapple wedge, a lime wheel on the rim, and a sprig of fresh mint tucked into the top. Optionally slap the mint between your palms first to release aromatics.

    Serve with a straw and a short stirrer so the drinker can mix the dark rum float into the drink to taste.
