Prepare grape leaves
Remove grape leaves from the jar and place them in a large colander. Rinse thoroughly under cold running water to remove excess brine. Separate leaves and trim any thick stem pieces. Pat dry with paper towels and set aside. Reserve the jar brine if desired to adjust saltiness later.

Par-cook the rice
In a medium saucepan bring 2 cups of water to a boil. Add the rinsed rice, reduce heat to a simmer, cover and cook for 6 minutes (rice should be partially cooked, still firm). Drain any excess water and spread rice on a tray to cool slightly.

Make filling
Heat 2 tablespoons olive oil in a skillet over medium heat. Add the finely chopped onion and sauté 4–5 minutes until translucent. Add the ground beef and cook, breaking up with a spoon, until no pink remains, about 6–8 minutes. Stir in the par-cooked rice, chopped dill, parsley, mint (if using), salt, pepper and allspice. Cook together 2 minutes just to combine flavors; remove from heat and let the filling cool until warm but not hot (about 10 minutes).

Assemble dolmathes
Lay one grape leaf shiny-side down on a flat surface with the stem end toward you. Place about 1 heaping tablespoon (about 20–25 g) of filling near the stem, centered. Fold the bottom stem over the filling, then fold in the sides and roll tightly away from you to form a neat cylinder about 1–1.5 inches thick. Repeat with remaining leaves and filling. If you have more filling than leaves, adjust and make smaller rolls. Place finished rolls seam-side down on a tray.

Prepare pot
Choose a wide, heavy-bottomed pot or deep skillet that fits the dolmathes snugly in a single or two overlapping layers. Arrange a layer of lemon slices on the bottom to prevent sticking and to add flavor. You can also place a few extra grape leaves over the lemon slices.

Pack dolmathes
Place the rolled grape leaves seam-side down in the pot in tight concentric circles, stacking in a second layer if necessary. Pack them snugly to prevent unrolling during cooking.

Make braising liquid
In a bowl whisk together the chicken or vegetable stock, 0.75 cup lemon juice and 1 cup water. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Pour the liquid gently over the dolmathes until mostly covered (about 3/4 of the way up the rolls). Add additional water or stock if needed so the rolls are nearly submerged but not floating free.

Simmer gently
Bring the pot to a gentle simmer over medium heat. Cover with a tight-fitting lid and reduce heat to low. Simmer gently for 45–55 minutes, checking once at 30 minutes to ensure liquid remains (add a few tablespoons hot water or stock if evaporating too quickly). Cook until rice and beef are fully cooked and leaves are tender.

Finish sauce
Remove pot from heat. Carefully transfer dolmathes to a serving dish using tongs or a slotted spatula, keeping them tight to avoid unrolling. Reserve the braising liquid. In a small saucepan, bring about 1 cup of the reserved braising liquid to a gentle simmer. Whisk together 1 tablespoon all-purpose flour with 2 tablespoons cold water to make a slurry; whisk the slurry into the simmering liquid to slightly thicken. Stir in 2 tablespoons chopped fresh dill and adjust seasoning with salt and pepper and additional lemon juice if desired.

Storage: Refrigerate leftovers in an airtight container with some of the braising liquid for up to 3 days. Reheat gently covered in a low oven (300°F / 150°C) or in a saucepan with a splash of stock until warmed through.
