Classic Daiquiri
Chill a coupe or martini glass by filling it with ice or placing it in the freezer for a few minutes. Add 2 oz light rum, 1 oz fresh lime juice, and 0.75 oz simple syrup into a cocktail shaker. Fill the shaker with ice (about 4 oz or enough to 2/3 full). Secure the lid and shake vigorously for 10–15 seconds until the shaker is cold and frosty. Dump the ice from the chilled glass, double-strain the contents of the shaker into the glass to remove ice shards. Garnish with a lime wheel. Serve immediately.
Strawberry Variation

Fresh Strawberry Daiquiri (cocktail, not frozen)
Muddle 3 hulled fresh strawberries in the bottom of a cocktail shaker until broken down and juicy. Add 2 oz light rum, 1 oz fresh lime juice, 0.75 oz simple syrup, and an extra 0.25 oz simple syrup if the berries are not very sweet. Fill the shaker with ice (about 4 oz). Shake vigorously for 12–18 seconds until well chilled and the mixture is well combined. Double-strain into a chilled coupe or martini glass to remove seeds and pulp. Garnish with a halved strawberry on the rim. Serve immediately.
Simple Syrup (if making at home)

Combine equal parts granulated sugar and water (for example 1 cup sugar and 1 cup water) in a small saucepan. Heat over medium, stirring until sugar dissolves. Remove from heat and cool to room temperature. Store in a sealed container in the refrigerator for up to one month.
