    Prepare the ingredients

    Dice the chicken or tofu, and chop all vegetables (carrots, green onions, bell pepper) as described in the ingredients list. Mince the garlic and ginger.

    Cook the protein (if using chicken or shrimp)

    In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the diced chicken or shrimp and cook until fully cooked, about 5-7 minutes. Remove from the skillet and set aside.

    Stir-fry the vegetables

    In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant. Then, add the diced carrots, bell pepper, and green peas. Stir-fry for about 3-5 minutes until the vegetables are tender.

    Combine ingredients

    Add the cooked rice to the skillet with the vegetables. Pour in the soy sauce and stir well to combine all ingredients. If using tofu, add it at this point, stirring gently to mix. Return the cooked chicken or shrimp to the skillet.

    Season and finish

    Add salt and black pepper to taste. Finally, stir in the chopped green onions and cook for another 2 minutes until everything is heated through.
