Prepare Noodles
1. Cook the Rice Noodles
In a large pot, bring 4 cups of water to a boil. Add the rice noodles and cook according to package instructions, usually about 5-7 minutes until tender. Drain and rinse under cold water to stop the cooking process. Set aside.
Prepare Vegetables
2. Chop the Vegetables
While the noodles are cooking, peel and julienne the carrot. Remove the seeds from the bell pepper and slice it into thin strips. Chop the green onions, separating the green tops from the white parts.
Prepare Tofu
3. Cook the Tofu
Cut the tofu into cubes. In a non-stick skillet, heat 1 tablespoon of sesame oil over medium heat. Add the tofu cubes and sauté until golden brown on all sides, about 8-10 minutes. Remove from heat and set aside.
Combine Ingredients
4. Mix Everything Together
In a large bowl, combine the cooked rice noodles, sautéed tofu, julienned carrots, sliced bell pepper, and bean sprouts. In a separate small bowl, mix the soy sauce, remaining sesame oil, and chili sauce. Drizzle the sauce over the noodle mixture and toss gently to combine.
Serve
5. Garnish and Serve
Transfer the LUU Noodle mixture to serving plates. Sprinkle with sesame seeds and chopped cilantro for garnish. Serve immediately and enjoy!
