    Prepare the Noodles

    Cook the rice noodles according to the package instructions. Drain and set aside.

    Prepare the Vegetables

    Slice the bell pepper, julienne the carrot, and cut the broccoli into small florets. Chop the green onions and mince the garlic.

    Prepare the Protein (if using)

    If using chicken, slice it thinly and set aside.

Cooking

    Stir-Fry the Chicken (if using)

    In a large wok or skillet, heat 1 tablespoon of oil over medium-high heat. Add the sliced chicken and stir-fry for about 5-7 minutes until cooked through. Remove from the pan and set aside.

    Stir-Fry the Vegetables

    In the same pan, add a bit more oil if necessary. Add minced garlic and stir-fry for 30 seconds until fragrant. Then add the bell pepper, carrot, and broccoli. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.

    Combine Noodles and Sauce

    Add the cooked rice noodles to the pan with the stir-fried vegetables. In a small bowl, mix together soy sauce, oyster sauce, sesame oil, sugar, and black pepper. Pour the sauce over the noodles and vegetables, tossing everything together to coat evenly.

    Add Chicken (if using)

    If you cooked the chicken earlier, add it back to the pan and mix everything well. Stir-fry for an additional 2 minutes until everything is heated through.

    Garnish and Serve

    Remove from heat, garnish with chopped green onions, and serve hot.
