Preparing the Filling

    Cook the Noodles

    In a pot of boiling water, cook the rice vermicelli noodles according to the package instructions, usually about 3-5 minutes. Drain and rinse under cold water to stop the cooking process.

    Prepare the Vegetables

    Using a vegetable peeler or a julienne slicer, thinly slice the carrot, cucumber, and red bell pepper into long strips.

    Chop the Herbs

    Rinse and roughly chop the fresh mint and cilantro leaves. Set aside.

    Prepare the Shrimp

    If not pre-cooked, steam or boil the shrimp until they turn pink and opaque, about 3-4 minutes. Peel and set aside.

Assembling the Spring Rolls

    Soak the Rice Paper Wrappers

    Fill a large bowl with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it becomes soft and pliable. Remove from water and lay it flat on a clean surface.

    In the center of the softened rice paper, place a small amount of the prepared rice vermicelli noodles, followed by a few strips of carrot, cucumber, red bell pepper, herbs, and shrimp.

    Roll the Spring Roll

    Fold the bottom edge of the wrapper over the filling, then fold in the sides and roll tightly to enclose the filling completely. Repeat with remaining wrappers and filling.

Making the Dipping Sauce

    Mix the Ingredients

    In a small bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, water, and chili flakes until smooth and well combined.
