Preparation
- 1
Soak the Glutinous Rice
Rinse the glutinous rice under cold water until the water runs clear. Place the rice in a bowl and cover with 2 cups of water. Let it soak for at least 4 hours or overnight.
- 2
Prepare the Coconut Sauce
In a small saucepan, combine 1 cup of coconut milk, 1 tablespoon of sugar, and 1 teaspoon of salt. Cook over low heat, stirring until the sugar is dissolved. Remove from heat and set aside.
Cooking
- 3
Steam the Rice
After soaking, drain the rice and place it in a steamer basket lined with cheesecloth. Steam the rice over boiling water for about 30-35 minutes, or until the rice is tender and sticky.
- 4
Combine Rice and Coconut Sauce
Once the rice is cooked, transfer it to a large bowl. Pour half of the coconut sauce over the warm rice and mix gently until the rice is fully coated. Let it sit for about 15 minutes to absorb the flavors.
Serving
- 5
Prepare the Mango
While the rice is resting, peel and slice the ripe mangoes into thin strips.
- 6
Serve the Dish
To serve, place a portion of the sticky rice on a plate, top with slices of mango, and drizzle with the remaining coconut sauce. Sprinkle with sesame seeds or mung beans if desired.
