Prepare Noodles

    Cook the Noodles

    In a large pot, bring 4 cups of water to a boil. Add 1 tsp of salt, then stir in 8 oz of egg noodles. Cook according to package instructions until al dente, usually around 6-8 minutes. Once cooked, drain and set aside.

Marinate Beef

    Marinate the Beef

    Slice 1 lb of beef flank steak into thin strips. In a bowl, combine 2 tbs of soy sauce, minced 2 cloves of garlic, 1 tsp of ginger, and 1 tsp of black pepper. Add the beef strips to the marinade, ensuring they are well coated. Allow to marinate for at least 30 minutes.

    Chop the Vegetables

    While the beef is marinating, chop 1 medium bell pepper, 1 medium carrot into thin strips, and prepare 1 cup of broccoli florets. Slice 2 stalks of green onions, keeping the white parts and green tops separate.

Cook Beef and Sauce

    Cook the Beef

    In a large skillet over medium-high heat, add the marinated beef along with the marinade. Stir-fry for 5-7 minutes until the beef is browned and cooked through. Remove the beef from the skillet and set aside.

    Cook the Vegetables

    In the same skillet, add a little oil if needed and stir-fry the chopped vegetables (bell pepper, carrot, and broccoli) for about 3-5 minutes until tender but still crunchy.

    Prepare the Sauce

    In a small bowl, mix 1 tbs of cornstarch with 2 tbs of water to create a slurry. In the skillet with the vegetables, add 2 cups of beef broth and bring to a simmer. Stir in the cornstarch slurry and cook until the sauce thickens, about 2 minutes.

    Combine Everything

    Return the cooked beef to the skillet, add the cooked noodles, and drizzle with 1 tbs of sesame oil. Toss everything together until well combined and heated through. Adjust seasoning with salt and pepper to taste.
