    Rinse the chicken leg quarters under cold water and pat dry with paper towels.

    Season the Chicken

    In a bowl, mix together olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper. Rub this mixture all over the chicken leg quarters. Let it marinate for at least 30 minutes.

    Prepare the Smoker

    Soak wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).

    Smoking the Chicken

    Place the soaked wood chips in the smoker. Once the smoker is ready, place the chicken leg quarters on the grill grates skin-side up. Close the smoker and smoke for about 2 to 2.5 hours or until the internal temperature reaches 165°F (74°C).

    If using BBQ sauce, brush it on the chicken during the last 30 minutes of smoking.
