    Prepare the Roast

    Preheat your oven to 325°F (163°C). Season the beef roast generously with salt and black pepper on all sides.

    Sear the Meat

    In a large skillet, heat the olive oil over medium-high heat. Add the beef roast and sear it for 3-4 minutes on each side until browned.

    Add Aromatics

    Transfer the seared roast to a roasting pan. In the same skillet, add the minced garlic and sliced onions. Sauté until the onions are translucent, about 5 minutes.

    Roast the Beef

    Pour the sautéed onion and garlic mixture over the beef roast in the roasting pan. Add the beef broth and Worcestershire sauce. Cover tightly with aluminum foil and roast in the preheated oven for about 3 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare.

    Make the Gravy

    Once the roast is done, remove it from the oven and let it rest for 15 minutes. Strain the liquid from the roasting pan into a saucepan. In a small bowl, mix cornstarch with water to create a slurry. Bring the strained liquid to a simmer, then stir in the cornstarch slurry, whisking until the gravy thickens.

    Slice the roast beef against the grain and serve with the gravy poured over the top.
