Prepare the Ingredients
Wash and dry the lettuce, mint, Thai basil, and bean sprouts. Julienne the cucumber and shred the purple cabbage. Cook the rice noodles according to package instructions and set aside.

Soften the Rice Paper
Fill a shallow dish with warm water. Dip one rice paper wrapper in the water for about 10-15 seconds or until it becomes soft and pliable. Remove and lay it flat on a clean surface.

Assemble the Rolls
Place a small amount of each ingredient (lettuce, mint, Thai basil, bean sprouts, cucumber, purple cabbage, and rice noodles) in the center of the rice paper wrapper. Be careful not to overfill.

Roll the Summer Rolls
Fold the sides of the rice paper over the filling, then roll from the bottom up to enclose the ingredients tightly. Repeat with remaining wrappers and filling.
