Prepare the Ingredients

Chop and prepare all the vegetables and meat as specified in the ingredients list.

Cook the Meat

In a large pan or wok, heat the vegetable oil over medium heat. Add the choice of meat and cook until browned.

Add Onions and Curry Paste

Add the sliced onion to the pan and sauté until translucent. Stir in the green curry paste and cook for another 2 minutes until fragrant.

Incorporate Coconut Milk

Pour in the coconut milk and bring to a gentle simmer.

Add Vegetables

Add the green beans, zucchini, carrots, broccoli, mushrooms, eggplant, bamboo shoots, and baby corn. Stir well to combine.

Simmer

Reduce heat to low and let the curry simmer for about 15-20 minutes, or until the vegetables are tender and the meat is cooked through.

Finish with Thai Basil

Stir in the Thai basil leaves and season with salt to taste. Remove from heat.

Serve the green curry hot with steamed jasmine rice or rice noodles.
