Fried Calamari Preparation
1. Prepare the Batter
In a large bowl, whisk together the all-purpose flour, coconut flakes, baking powder, salt, and black pepper. In a separate bowl, beat the eggs and then gradually add them to the dry ingredients until well combined.
2. Dredge the Calamari
Dip the calamari strips into the batter, ensuring they are evenly coated.
3. Fry the Calamari
Heat the oil in a deep pan over medium-high heat. Once the oil is hot, carefully add the battered calamari in small batches, frying until golden brown and tender, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.

In a saucepan, combine the pineapple juice, brown sugar, rice vinegar, and soy sauce. In a small bowl, mix the cornstarch with water to make a slurry, then add to the saucepan. Bring to a simmer over medium heat, stirring until thickened. Add the diced bell peppers and cook for an additional 1-2 minutes.
